Cappuccino Biscotti with Chocolate Bunny Drizzle


Biscotti is so very easy to make, easier than cookies and really impressive as a gift.
This particular recipe includes coffee and a little milk to give it that cappuccino flavor.    
How is it that they are drizzled in chocolate bunny you ask?   I had this beautiful Dove Chocolate bunny that had been decapitated by my daughter on Easter but  never touched again. I just couldn't see chucking the poor little guy, head or no head, it was still chocolate and good chocolate at that!  So, I chopped it up, threw some in the biscotti and melted the rest for glaze.  Damn clever if you ask me!  You could certainly use chocolate chips if you don't have a decapitated bunny lounging around.






 
Ingredients
2 cups all-purpose flour
1 cup sugar
1/4 cup unsweetened cocoa
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 teaspoons instant coffee granules (I used Starbucks VIA...duh!)
2 teaspoons warm milk (heat in the micro for about 30 seconds)
1 teaspoon vanilla extract
2 eggs
1/3 cup chopped slivered almonds or walnuts(optional)

8 oz of chocolate - bunny or chips, whatever you got

Preheat oven to 325 degrees

In large mixing bowl or Kitchen Aid mixer, combine flour, sugar, cocoa, baking powder, baking soda, salt and cinnamon.  Mix well. 
In small bowl combine instant coffee, water and vanilla. Add eggs and mix until blended.     Add to flour mixture . Mix on medium for about 3-5 minutes until well blended.  Toss in the nuts and fold in by hand.

Turn dough out onto a lightly floured surface, and knead lightly 7 or 8 times. Shape dough into a 16-inch-long roll. Place roll on a baking sheet coated with cooking spray or silicone mat, and flatten roll to 1-inch thickness.



 Bake for 30 minutes.  Let cool for 10 minutes before slicing

Cut the roll diagonally into 1/2 inch slices, and place on baking sheet. Bake for 10 minutes. Turn cookies over, and bake an additional 10 minutes (cookies will be slightly soft in center but will harden as they cool). Remove cookies from the baking sheet, and let cool completely on wire rack.




Melt chocolate in microwave safe bowl, 30 seconds at a time until smooth.  If too thick add a teaspoon or two of vegetable oil.


Drizzle with melted bunny and enjoy! :)
