Okay now, don't be talkin' smack about my simple old Taco Pie...I know, it's a little South Park but it is really yummy!
This recipe took first place in the Pillsbury Bake Off in 1970 and I've been eating it ever since. My mom made it, my sisters make it (well at least one of them, the other one doesn't eat, an apparent gene mutant), and I make it at least once a month. Sometimes I'll top with canned chilies or thawed corn. I have even turned it into cheeseburger pie with hamburger, bbq sauce and lotsa cheese (of course).
You will note that I don't crimp the edges of the pie...I pull it up and partially over the filling...I don't know why...I just think it looks cool...you can crimp or pull, whatever you feel like doing with your dough is fine with me...
Ingredients
1 roll of Pillsbury Crescent rolls (I have tried low fat and off brands and Pillsbury rocks the crescent roll world)
20 oz ground turkey
1 package of taco seasoning or *homemade taco seasoning (see below recipe)
1/3 cup water
1 cup grated cheese (most any kind of cheddar, colby or mixture will do)
1 cup light sour cream
1 cup crushed tortilla chips
Homemade Taco Seasoning - makes equivalent of 3 packages - use 1/3 of the recipe for one pie
1/3 cup paprika (I like to use half smoked and half sweet paprika but either will do)
1/3 cup chili powder
3 tablespoons ground cumin
1 teaspoon garlic powder
2 tablespoons flour
1 teaspoon sugar (yep sugar..trust me)
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne - more if you like it hotter
Mix and store in a mason type jar...keeps for several months.
DIRECTIONS
Heat oven to 375°F.
Saute ground turkey in large skillet until thoroughly cooked, stirring frequently. Drain.
Stir in taco seasoning mix and water. Simmer 5 minutes.
Meanwhile, separate crescent dough into 8 triangles. Place triangles in ungreased 9 or 10-inch pie pan, pressing to form crust.
Spoon turkey mixture into crust. Spread sour cream over turkey mixture.
Cover with cheese. Sprinkle with tortilla chips.
Bake at 375°F. for 20 to 25 minutes or until crust is golden brown. Cut in wedges and serve with
an additional dollop of sour cream and salsa. Yumbo!
I made this last night and our picky 5 year old had put extra fingers up because two thumbs up wasn't enough! It was delicious - like Taco Bell out of the oven! Thank you!
ReplyDeleteYay! Try making it a 'cheeseburger pie' sometime. Delete taco seasoning and add a bit of bbq sauce a lots of cheese...kids love that!
Deletep.s. Tell Glenn Hi!
